Lo chef stellato Agostino Iacobucci, del ristorante “I Portici” di Bologna, oggi ci propone la ricetta della Pasta fave e gamberi “colore, consistenze e sapori”, che compare anche al mese di maggio 2016 del calendario Leonessa.
Ingredienti
320g Pasta Mista Leonessa,
250g Fave fresche,
2 Cipollotti freschi,
20g Guanciale,
20g crosta di Parmigiano,
16 Gamberi freschi,
1lt Brodo vegetale,
Schiuma di latte,1 Carota,
Sedano,
10 pomodorini.
Preparazione
Pulisco i gamberi e li taglio in due, avendo cura di mettere le teste ed i carapaci da parte. Per ogni porzione posiziono 4 gamberi tra due fogli di pellicola e con l’aiuto di un batticarne li stendo fino ad ottenere uno spessore omogeneo. Li adagio in uno stampo a forma di cupola ed elimino la prima pellicola. In una pentola capiente faccio rosolare nell’olio le teste, i carapaci, la carota, il sedano ed un cipollotto tagliati grossolanamente, poi aggiungo i pomodorini tagliati a metà ed incorporo1lt di acqua fredda. Lascio cuocere per circa 2 ore a fiamma moderata e alla fine filtro il tutto. In una pentola faccio rosolare nell’olio il guanciale, aggiungo il cipollotto tagliato finemente, le fave private della buccia, la crosta di parmigiano e metà del brodo. Appena inizia a bollire calo la pasta e la cuocio aggiungendo man mano il restante brodo. Ultimata la cottura “al dente” della pasta la dispongo negli stampi. Servo sformando direttamente nei piatti, avendo cura di eliminare la seconda pellicola e decorando con la bisque e la schiuma di latte.

Timbro erbaceo e vegetale delle fave, bilanciato dalla pasta e dai gamberoni, giustamente arricchito da parmigiano e guanciale che vanno a dare sapidità e persistenza al piatto, L’abbinamento potrebbe risultare interessante con una Lacrima Christi Bianco dalla spiccata mineralità, distintivo dei terreni vulcanici, con macchia e frutta mediterranea con assaggio corposo, gradevole equilibrio tra dotazione alcolica freschezza e sapidità.
The Michelin-starred chef Agostino Iacobucci from the restaurant “I Portici” in Bologna shows his recipe : “Pasta with fava beans and red shrimps”.
Ingredients
320gr mix of Pasta Leonessa
250gr fresh fava beans
2 onions
20gr cheek lard
20gr Parmesan crust
n°16 fresh shrimps
1lt vegetable stock
1 carrot
n° 10 tomatoes
Milk mousse and celery.
Method
Clean and devine the shrimps and cut them in half. For any portion: place 4 shrimps between 2 wrap and spread them over. Place the shrimps into a domed shaped mould and take bake the first wrap. Take a pan with oil and brown shrimps head, the carapace, carrot, celery and onion, then add tomatoes (cut in half) and 1lt of cold water. Leave it for about 2 hours. Take another pan and brown the cheek lard with oil, onion, peeled fave beans, parmesan crust and half of vegetable stock. When it boils add the pasta and use the remaining vegetable stock for cooking. When the pasta is ready, place it into the moulds. Place the moulds on a plate and take care of removing the 2nd wrap. Use the milk mousse for garnish. The best wine pairing could be the “Lacrima Christi”, white wine with a taste of Mediterranean fruits and freshness.
